DAY 18 \u2013 Is Ros\u00e9 all\n Day. Depending on where you are in the\n world, today might not feel like a ros\u00e9 kind of day. <\/p>\n

I\u2019m shooting in Kansas City in early summer, and we are lucky\n enough to have ripe strawberries. The scent I brought today, along with a few\n other items: Sea salt and Mediterranean herbs. <\/p>\n
These a just a few notes you might detect in this Ros\u00e9 wine.\n <\/p>\n

TITLE\/SCREEN:<\/em> <\/strong>Ros\u00e9 was not always cool in the\n USA. <\/p>\n Ros\u00e9 was not always cool. Believe it or not. Maybe you still\n don\u2019t think it\u2019s cool, and that\u2019s fine, but it still deserves a lesson. <\/p>\n
I remember when people used to dismiss ros\u00e9 as sweet, pink\n wine. They would wrinkle up their faces and scoff at it. <\/p>\n
TITLE\/SCREEN: ** Optional graphic. From Anti-Ros\u00e9\n Snobbery to Bros\u00e9: A short history<\/em><\/strong><\/p>\n This is in part due to Sutter Home\u2019s famous White Zinfandel,\n which was released in the late 1970s. Right before I was born (I know, I don\u2019t\n look that old). <\/p>\n
Which reminds me I never thought to ask until now, how old\n my students are! It\u2019s a miracle that I even on the internet, so let me know how\n old you guys are in the comments. <\/p>\n
TITLE\/SCREEN: <\/em><\/strong> How old are you? <\/p>\n Let me know. <\/em><\/strong>I\n hope you\u2019re over 21, or just listening. Or in a civilized country where the\n legal drinking age is 18. <\/p>\n So, White Zinfandel. The wine came out sweeter than usual,\n but a taste for it caught on and spread throughout our country. Until recently most Americans associated ros\u00e9\n with a cheap, sweet, pink drink. <\/p>\n
Then the ros\u00e9 craze happened. In a few years ros\u00e9 went from\n being something nobody wanted to having its own season.<\/p>\n
TITLE\/SCREEN: <\/em><\/strong> Ros\u00e9 has always been around.<\/p>\n Before Ros\u00e9 Season and Ros\u00e9 all Day, and bros\u00e9 and fros\u00e9, ros\u00e9\n was a traditional style of winemaking throughout Europe that made its way to\n America. <\/p>\n
Ros\u00e9 can be produced in a number of ways. One of the most\n widely used is Saign\u00e9e method, which is French for \u201cbleeding-off.\u201d <\/p>\n
TITLE\/SCREEN: <\/em><\/strong> Saign\u00e9e\/ optional graphic<\/p>\n By draining away some of the freshly crushed juice, winemakers\n can intensify the flavors, aromas, color, and texture and color that all comes\n from the skin. The leftover juice ranges\n from almost white to deep pink, depending on how soon it is drained away. <\/p>\n
TITLE\/SCREEN: <\/em><\/strong> Short Crush<\/p>\n Winemakers can also crush and press the red grapes and leave\n the skin on just long enough to extract as much or as little colo and character as they want.<\/p>\n
TITLE\/SCREEN: <\/em><\/strong> Blend<\/p>\n Blending the juice of red and white grapes both before and\n after fermentation is another way to produce ros\u00e9. <\/p>\n
While ros\u00e9 may have started as an afterthought in the USA,\n it has certainly grown into a prized and popular style of wine.<\/p>\n
In many areas throughout the southern Mediterranean, ros\u00e9 is\n the wine of choice to accompany their distinctive cuisine. Provence, France is\n as famous for spicy seafood and Moroccan-influenced dishes as they are for\n salmon pink-colored ros\u00e9s that pair perfectly with them. Like this guy.<\/p>\n

Tasting ros\u00e9 is a little trickier since the wine making\n methods e vary so much. <\/p>\n
Unless you already know exactly what kind of ros\u00e9 you are\n drinking, it can be difficult to make assumptions. But the tasting process is\n the same. <\/p>\n
I brought a classic Proven\u00e7al-style ros\u00e9 today. <\/p>\n
TITLE\/SCREEN: Look<\/p>\n
Color: The color of\n ros\u00e9 can start practically clear or reach deep, almost opaque hues of magenta.\n It all depends on how long the juice was in contact with the skin.<\/p>\n
TITLE\/SCREEN: Smell<\/p>\n
Aroma: Aromas of ros\u00e9 also very considerably. Look for young, not overripe berry notes,\n some citrus, and even sweet spices like cinnamon. You might also detect\n delicate herbal notes of Mediterranean herbs like tarragon and bay leaf, or\n even some salty sea breeze! <\/p>\n
TITLE\/SCREEN: Taste <\/p>\n
Palate: Again, this can vary considerably, but look for an\n initial crispness and brightness. Lots of tingly acidity. Or heat, from alcohol. Despite their pale\n appearance, ros\u00e9 can still pack some heat. <\/p>\n
TITLE\/SCREEN: Converse<\/p>\n
You definitely want to drink these young. As you recall, the\n polyphenols in the skin also work as natural preservatives. Unless this ros\u00e9 was blended with young, white\n grapes with higher acidity, it might start to lose energy and feel flat on your\n palate. <\/p>\n
But never fear, New Ros\u00e9 comes out each year!<\/p>\n
