Today is lucky episode 13 and we have reached the finish\n line. Don\u2019t panic! <\/p>\n

Today for example I brought the heat. Cayenne pepper, some\n dried red peppers and coffee grounds. <\/p>\n
These are all scent notes you might find in a robust,\n barrel-aged Shiraz, or Syrah-based like\n this one from South Africa.<\/p>\n

When you hear a wine described as having a long finish, or\n having a bright fruity finish we are talking about the lasting impression,\n after you swallow. <\/p>\n
Think of the finish as the follow-through as well as the\n aftertaste. <\/p>\n

Can you still feel the prickly acidity of a young, vibrant\n wine? That is a crisp finish.<\/p>\n
Is there a lingering flavor of ripe fruit or spices on your\n palate? That\u2019s a fruity or spicy finish.\n <\/p>\n
Is there a glossy, mild feeling at the back of your throat?\n That\u2019s a smooth finish. <\/p>\n
Do you feel some saltiness, or a rush of salivation? Is it\n mouthwatering at the end? That is a mineral finish, and we\u2019ll get to that in\n the next episode, on Day 14. <\/p>\n

Maybe there is barely any finish at all. The wine is super easy\n to sip on like a porch wine or a poolside ros\u00e9, and that\u2019s fine too, if that\u2019s\n what you are in the mood for. <\/p>\n

Often, but not always, these big, robust wines have an\n equally robust and complex finish, which speaks to the quality and balance of\n the wine. <\/p>\n

Sounds romantic right? <\/p>\n
TITLE\/SCREEN: Fine wines are romantic! *Possible heart graphic?<\/strong><\/p>\n They are pleasure for the senses, they connect you nature\n and the people around you. They make you more alive. <\/p>\n
These are the wines you sip slowly for hours and never run\n out of things to say.<\/p>\n
If a wine is all nose and no body, well, that would be funny\n on a person, let alone a wine. Remember the Flonase ad? <\/p>\n
If a wine is all body and feels really heavy on your palate,\n but the flavors just disappear, it\u2019s kind of like eating a dry dinner roll,\n when there\u2019s no butter on the table. It fills you up but it\u2019s not special. <\/p>\n
TITLE\/SCREEN: The finish is your lasting impression. <\/p>\n
Take of a sip of wine now. If you\u2019re enrolled, you might\n have a big, spicy Shiraz Blend like this one. \n Either way, take a moment to notice: <\/p>\n
First, what you smell<\/p>\n
Second, what you taste <\/p>\n
Third, how long the flavors linger after you swallow.<\/p>\n

How do we measure the finish you might ask? Good\n question. We time it! <\/p>\n
(*Optional graphic with a clock, timer, aromas? )<\/em><\/strong><\/p>\n A medium finish could last up to thirty seconds. A long\n finish, up to one minute.<\/p>\n
Like everything else, the finish is measured on a spectrum.\n Long or medium. <\/p>\n

If there isn\u2019t much to say, you can use words like\n short-lived, or light or if you want to get fancy, evanescent or fleeting. <\/p>\n

Remember, the finish doesn\u2019t make the wine, and plenty of\n delightful wines are easy breezy beautiful. <\/p>\n
But a wine that gets your sensory hopes up and leaves you\n hanging in the end isn\u2019t balanced or harmonious. <\/p>\n
And always remember that fine wine is defined by balance and\n harmony. <\/p>\n

I chose this wine for a reason. It\u2019s got a finish just won\u2019t\n quit. All the dark spice you smell on the nose leaves a trail of tingly heat\n long after you swallow. It\u2019s intense! <\/p>\n
And definitely a medium-to-long finish. <\/p>\n
