Today we\u2019re going to talk about something you can do right now to learn more about wine tasting, even if you don\u2019t have any wine\u2026 intrigued? \u201cStick\u201d around because today is all about viscosity.<\/p>\n
Welcome back to day 6 of Divino Wine School! <\/p>\n
I\u2019m Annie, certified sommelier, and today we continue our\n VISUAL evaluation of wine, and specifically the consistency of the wine itself.\n How it moves in the glass. <\/p>\n

As usual we have a scent note of the day to train our noses and today is dried fruit, specifically dried cranberries and other mixed berries. <\/p>\n

I brought a Primitivo today. This wine comes from the hot\n and sunny [bootheel \/\/ or south ]of Italy and it is packed with hot, juicy\n dried fruit aromas. <\/p>\n
If you haven\u2019t already, pour yourself a small glass of wine.\n If you\u2019ve got your berries, see if you can smell them in there! <\/p>\n

I would tell you to look and not touch, but there\u2019s no way I\n can enforce that rule from inside the screen.<\/p>\n

But seriously, if you take away anything from this series,\n it is that wine tasting is truly a multisensory activity. That is why people\n get obsessed with wine. It activates so many parts of your brain and awakens\n emotions.<\/p>\n
Wine tasting awakens the senses. <\/p>\n
It\u2019s no wonder that\n throughout history, wine has always been a social and religious ritual. <\/p>\n
I mentioned in the last few episodes that dense color usually\n mean darker, richer, riper fruit and spice aromas and flavors and will likely\n feel denser, silkier or heavier on your palate. <\/p>\n
This goes for sparkling wines too. If a sparkling wine is a\n deeper golden yellow color, expect extra intensity all around and a softer\n fizz. <\/p>\n
Viscosity<\/p>\n
But today I want to talk specifically about viscosity.<\/strong> <\/p>\n Gently swirl your glass and watch it cling to the edges and\n slowly drip down in little arches \u2013 those are called tears \u2013 and they tell you\n a lot. Does the wine wash over the glass like water, or cling to it like maple\n syrup, or something in between? <\/p>\n

When I said I didn\u2019t need wine earlier It\u2019s because you can test the viscosity of anything in a glass. Water, juice, you name it! Grab what you\u2019ve got!<\/p>\n
Those little arches indicate Glycerol, which is the third most important byproduct of winemaking, after alcohol and C02. There\u2019s more science for you! <\/p>\n
Legs on the glass indicate the presence of Glycerol. <\/p>\n
While the scientists are still arguing over exactly what\n causes it during the winemaking process, they all agree that the ripeness of\n the grapes is a factor. <\/p>\n
Ripe, juicy grapes means more sugar, body and more\n aroma. <\/p>\n

If a wine glides and glistens on the glass you can bet it\n will feel the same way in your mouth. Silky, smooth, and warm, whereas a wine\n that swishes more like water is likely to be lighter and crisp. In the glass\n and on your palate.<\/p>\n
Again, just like color, the consistency of wine depends as\n much on the grape variety as it does on the climate and the winemaking process.\n <\/p>\n

The Primitivo today, comes from a hot and sunny climate and\n the grapes are picked at peak ripeness, for the most part. Look at the way it\n really holds on to the edges. <\/p>\n <\/figure>\n This wine is pretty robust. It\u2019s 13.5% alcohol by volume.<\/p>\n
If you haven\u2019t already, give your glass a swirl, not too\n hard, and watch how it behaves. <\/p>\n
